Carrot Cake

I have to confess, I don't normally carrot cake... but this was requested frequently and I refuse to put something out that I won't taste test myself. And after this cake, I'm now a fan of carrot cake!! I've packed loads of moisture into the cake and made sure that the cream cheese icing is the perfect balance of sweet and tangy.

The Carrot Cake comes as a 6" or 8” layered cake and is iced with cream cheese icing with a sprinkling of praline pecans.

6” Cake serves 6-8;  8” Cake serves 10-12
